PLANTAIN CHIPS (KPEKERE)



Ingredients:

- Unripe plantains
- Groundnut oil for frying 
- Salt
- Hot pepper or garlic cloves for additional flavor variations


Method:

Step 1: Peel the green bananas, be careful as it tends to stain clothes and cutting boards. The plantain will be easier to peel, but the flesh of the green banana is more likely to stick to its skin

Step 2: Slice the plantain length wise, full length or half length, or slice then as thin rounds or thin diagonal ovals, use a mandolin to get that perfect thinness.


Step 3: Heat the oil, either in a deep sauté pan or fryer, ideal temperature for frying these is between 375f-400f, there should be enough oil to fully cover the plantains. 

Step 4: Add the bananas to the hot oil, be careful not overcrowd to keep them from sticking together.



Step 5: Fry until the chips get a golden color

Step 6: Remove the chips from the oil and drain on paper towels

Step 7: Sprinkle with salt and serve either warm or cold.
