Fried Rice with fried beef, fried turkey, pepper sauce and coleslaw



INGREDIENTS FOR FRIED RICE AND FRIED TURKEY AND BEEF
1 kg of Parboiled Rice, 
Onions, Red Bell Pepper (Tatashe), carrots, Peas and Corn, butter, Stock Cubes and Chicken Stock

INGREDIENTS FOR PEPPER SAUCE

Fresh or Canned Tomatoes, Tatashe,  Scotch Bonnet or Red Hot Chili Peppers, onion,Garlic,  Ginger,  vegetable oil, Stock Cubes, Crayfish, Black Pepper, salt

METHOD OF COOKING


1) PARBOIL THE RICE FOR 10 MINUTES. LATER WASH AND SIEVE YOUR RICE AND SET ASIDE. 
2) PUT BUTTER IN THE POT AND MELT IT TILL IT IS HOT ENOUGH.ADD YOUR FINELY CHOPPED ONIONS AND FRY FOR 5 MINUTES.
3) ADD YOUR RICE AND KEEP STIRRING IT CONSTANTLY FOR 7-9 MINUTES.LATER ADD CUBED CARROTS AND CUBED TATASHE AND KEEP STIRRING. 
4) ADD STOCK CUBES AND SALT (USE SEASONED SALT IF IT IS AVALIABLE ) AND KEEP FRYING. THEN ADD SOME CURRY AND THYME AND MIX WELL.
5) ADD YOUR STOCK TO YOUR MIXTURE.MAKE SURE YOUR STOCK IS VERY HOT FOR BETTER RESULT. REDUCE THE FIRE TO MEDIUM LOW AND COOK FOR 15-20 MINUTES. 
6) AFTER 15-20 MINUTES.WASH AND ADD YOUR CORN AND PEAS. THE REASON WE ADD IT LATER IS TO PRESERVE THE BRIGHT COLOR OF THE PEAS AND CORN FOR BETTER LOOK. 
7) CONTINUE COOKING TILL IT IS DRY.WHEN YOU PUT OFF THE FIRE MIX IT WELL AND COVER IT FOR IT TO REST AROUND 15 MINUTES. 

METHOD OF COOKING FOR PEPPER SAUCE

1) BLEND TOMATOES,  TATASHE,  ONION, GARLIC AND GINGER WITH YOUR BLENDER. MAKE SURE YOU DON'T ADD WATER DURING BLENDING. 
2) PUT ENOUGH OIL IN THE POT AND HEAT IT TILL IT IS VERY HOT.EXCESS OIL CAN BE REMOVED AFTER COOKING THE SAUCE SO BE GENEROUS WITH OIL. PUT YOUR BLENDED MIX IN HOT OIL AND STIR WELL. MAKE SURE YOU MIX IT FROM TIME TO TIME TO AVOID BURNING.
3) WHEN THE MIX IS HALF WAY DRY ADD YOUR SPICES TO IT AND KEEP COOKING IT TILL IT IS COMPLETELY DRY.YOU CAN INCREASE OR DECREASE THE AMOUNT OF PEPPER. 
4) REMOVING OIL IS OPTIONAL. I PREFER TO KEEP THE OIL BECAUSE IT HELPS TO PRESERVE THE SAUCE LONGER TIME. THIS SAUCE CAN BE CONSUMED BOTH HOT AND COLD.
